日光下攤晒是為了讓茶菁降低葉面的透明性,
以利水份散發,我們稱-走水.

太陽過大時,會拉上黑網遮陽,
防止茶葉水份流失過快~

用雙手將茶菁翻動,
使茶菁摩擦導致葉緣細胞破損,
使茶葉走水平均,

茶葉隨著-揉捻機運轉.滾動,逐漸捲曲緊縮.
揉捻的壓力使茶汁液擠出黏附於茶葉表面,
經過這道過程,才能成為滋味香醇之茶湯

將揉捻過的茶葉,用布包起來成圓球狀,
